COMPOSITION OF DAILY MEAL

FIRST COURSE

A plate of pasta or rice (white or with tomato) and in rotation:
potato dumplings, traditional italian pasta (tagliatelle, trofie, caserecce, orecchiette,), gratin pasta.
Broth, soup or purée.

MAIN COURSE- 3 hot dishes

Dish of fish.
Two types of grilled meat, beef steak (daily) and in rotation:
chicken breast, turkey breast, pork chops, escalope and burgers. Pizza with tomato and mozzarella.

COLD PLATTER AND READY-SLICED MEAT

MEAT: English roast beef, beef carpaccio, veal with tuna sauce and in rotation: 
assorted cold platter. CURED MEATS: raw ham, speck, air-cured beef, ham steak, salami, bacon, air-cured pork meat of Parma, mixed ready-sliced meat.

CHEESES: parmesan cheese, mozzarella cheese, mini mozzarella cheese, swiss cheese, brie cheese, taleggio cheese, blue cheese, goats cheese, crescenza cheese, asiago cheese, ricotta cheese.

SIDE DISHES:

One hot side dish, legumes and vegetables (at least 3 variants), seasons salads (at least 5 variants).
